Sticky Mango Chicken

  • Grated zest and juice of 1 lime
  • 2 tbsp Clandeboye Natural Yoghurt
  • 2 Skinless Boneless Chicken Breasts
  • 2 Tbsp Mango Chutney
  • ½ tsp Cumin Seeds
  • Fresh Coriander Leaves

Steps

  1. Mix lime zest, yoghurt and salt/pepper in a bowl.
  2. Score/slash the chicken a few times with knife to allow marinade to sink in then add the chicken to the bowl and coat well in the yoghurt mixture.
  3. Remove chicken and cook either for 10-12 minutes under medium grill or 10 minutes at 200c in airfryer (turn once).
  4. Meanwhile mix lime juice, mango chutney and cumin in a bowl.
  5. After 10-12 minutes spoon the glaze over the chicken and cook for a further 5-7 minutes.
  6. Serve the sticky chicken with a crispy salad, lime wedges and rice or noodles!
