Sticky Mango Chicken

Ingredients
- Grated zest and juice of 1 lime
- 2 tbsp Clandeboye Natural Yoghurt
- 2 Skinless Boneless Chicken Breasts
- 2 Tbsp Mango Chutney
- ½ tsp Cumin Seeds
- Fresh Coriander Leaves
Steps
- Mix lime zest, yoghurt and salt/pepper in a bowl.
- Score/slash the chicken a few times with knife to allow marinade to sink in then add the chicken to the bowl and coat well in the yoghurt mixture.
- Remove chicken and cook either for 10-12 minutes under medium grill or 10 minutes at 200c in airfryer (turn once).
- Meanwhile mix lime juice, mango chutney and cumin in a bowl.
- After 10-12 minutes spoon the glaze over the chicken and cook for a further 5-7 minutes.
- Serve the sticky chicken with a crispy salad, lime wedges and rice or noodles!
