  • 2-3 bananas
  • 1 TBSP rum (optional)
  • 2 TSP cinnamon
  • 1 TBSP butter, softened
  • Juice of 1/2 lime
  • 1 TBSP Demerara sugar

  1. Split the bananas lengthwise and put on baking paper still in their skins.
  2. Mash the rest of the ingredients, except the sugar) into a paste and spread over the bananas.
  3. Sprinkle over the sugar.
  4. Bake in a hot oven for ten minutes, serve with Clandeboye Yoghurt and lime wedges.
