Comber Earlies Potato Salad: Three Simple Recipes

Looking for that perfect BBQ or picnic party dish? We bring you three simple recipes from Kim Close featuring the delightful Comber Earlies Potatoes. Diving into the world of flavours using the deliciously creamy Clandeboye Greek Style Yoghurt to create that perfect potato salad that is guaranteed to impress your family and friends.

Classic Bacon & Spring Onion

Our first recipe combines the flavours of crispy bacon, fresh spring onions and creamy potatoes.

Ingredients

- 500g small Comber Earlies, steamed until just tender and set aside to cool completely

- ½ carton (approx. 225g) Clandeboye Greek Style Yoghurt

- ½ Bunch (approx 4-6) spring onions, sliced very finely (keep some back for garnish)

- 1 x 300g pack of streaky bacon, fried, grilled or air-fried until very crispy, cooled then crumbled (keep some back for garnish)

- 1 TBSP apple cider vinegar

- Salt & pepper to taste (be careful – if the bacon is very salty, you might not need any salt at all!)

Method

- Half (or quarter) the cooled potatoes – you want them bite size

- Put the rest of the ingredients in a large bowl and mix to combine everything

- Add the potatoes and gently stir with a large spoon to coat all the potatoes with the dressing

- Check seasoning

- Put in a serving bowl and garnish with the spring onions and some crumbled bacon

Classic Bacon Spring Onion

Zesty-Lime Basil Potato Salad

Our second recipe is a refreshing and flavourful twist on traditional potato salad. This Zesty-Lime Basil Potato Salad makes a delicious starter or side dish for any summer gathering.

Ingredients

- 500g small Comber Earlies, steamed until just tender and set aside to cool completely

- ½ carton (approx. 225g) Clandeboye Greek Style Yoghurt

- Half a bunch of fresh basil, leaves picked (approx. 15-20g). Chop a few leaves very finely for garnish

- 1 small, ripe avocado

- Juice of a lime

- Salt & pepper to taste – salt complements the lime really well, so don’t leave it out!

Method

- Half (or quarter) the cooled potatoes – you want them bite size

- Put the rest of the ingredients in a blender and blitz until smooth and creamy

- Add the potatoes and gently stir with a large spoon to coat all the potatoes with the dressing

- Check seasoning

- Put in a serving bowl and garnish with a scattering of chopped basil

Zesty Lime Basil Potato Salad

Olivier Salad

A hearty salad that typically includes potatoes, vegetables and meat, all mixed together using Clandeboye Greek style Yoghurt to create that perfect creamy dressing. The Olivier salad can have extras added in - think hard boiled eggs, peas, ham – it can easily make a great picnic main!

Ingredients

- 500g small Comber Earlies, steamed until just tender and set aside to cool completely

- ½ carton (approx. 225g) Clandeboye Greek Style Yoghurt

- 2 tspn tomato ketchup

- 2 tspn sriracha (or your favourite hot sauce)

- 2 tspn paprika

- 2 tspn finely chopped cornichons or gherkins

- ½ red onion – very finely minced

- Salt & pepper to taste

Method

- Half (or quarter) the cooled potatoes – you want them bite size

- Put the rest of the ingredients in a bowl and stir to combine

- Add the potatoes and gently stir with a large spoon to coat all the potatoes with the dressing

- Check seasoning

- Put in a serving bowl and garnish with a sprinkle of paprika

Olivier Salad

Potato salad is a great addition to a BBQ, picnic or party served with cold cuts e.g. ham, roast chicken or BBQ meats.

When you cook and cool potatoes (or rice or pasta) and let it cool before eating it, some of the carbohydrate becomes resistant starch – a kind of fibre that you can’t digest. So, not only do the recipes use Greek yoghurt but they are higher in fibre – potato salad is a really healthy way to eat your spuds!
